MICHELIN also noted that chefs have increasingly drawn inspiration from local ingredients, traditions and regional heritage, while a new generation of talent continues to elevate the country’s gastronomic landscape.
“The Philippines continues to impress with the way its culinary scene is evolving while remaining deeply connected to its roots. Our Inspectors found chefs expressing a growing confidence in showcasing local ingredients, traditions and regional flavors, while bringing fresh perspectives and creativity to their craft,” said Gwendal Poullennec, International Director of the MICHELIN Guide.
“The result is a dining landscape that is increasingly diverse, distinctive and reflective of the country’s rich gastronomic heritage,” the executive added.
MICHELIN said Filipino cuisine accounted for nearly 60 percent of newly selected establishments included in the list. (Joyce Ann L. Rocamora/PNA)
